The Honey Sun-Dried (HSD) process was specifically developed in Koraput to sit between the boldness of naturals and the clarity of washed coffee — and it achieves that balance exceptionally well. In the HSD method, the cherry skin is removed by a depulper but the mucilage — the sticky, sugar-rich layer around the bean — is left on during the drying phase. The beans are then laid on raised drying beds and turned multiple times daily over 10–20 days.
The result is a cup that carries the caramel and stone-fruit sweetness of a natural without the heavy ferment character. Acidity is present but soft. Body is full and silky. It is a profile that works across brewing methods — from espresso and Aeropress to filter and cold brew — and tends to convert customers who normally prefer washed coffees.
Koraput HSD is available in three honey grades: Gold Honey (most mucilage retained, sweetest and most complex), Red Honey (medium mucilage, balanced sweetness and acidity), and Yellow Honey (least mucilage, cleanest expression closest to washed). Gold and Red Honey lots score 87–88 SCA; Yellow Honey is typically 85–86.
All HSD lots are grown by tribal farming cooperatives in Koraput's Eastern Ghats at 900–1,200 masl, processed at community micro-mills, and packed in GrainPro-lined jute bags for export.
